POTD - Sizzling Drop [beginnings]

My technique for verifying the pan is hot enough - sprinkle some water on the pan and if the water forms little jumpy beads and sizzles, it's ready for some serious saute action.

After several tries capturing the sizzling drops, my pan was smoking hot, the beginning of tonight's dinner preparation.
